Seriously, I do the holidays up <em><strong>big</strong></em>, and there are enormous mounds of [gluten-free] food cranked out of my kitchen. Planning out this year&#8217;s smoked turkey I came across something a bit unnerving.</p>
<p>Charcoal may contain <span class="domtooltips">gluten<span class="domtooltips_tooltip" style="display: none">the tough, viscid, nitrogenous substance remaining when the flour of wheat or other grain is washed to remove the starch</span></span>! What?!</p>
<p>Please don&#8217;t think I&#8217;m stuffing my face full of burnt up chunks of wood. I promise I&#8217;m not! But I just learned that charcoal briquettes are made up of wood and sawdust and minerals and whole bunches of things I didn&#8217;t know were in there. And apparently they have to use something to stick them all together&#8211;starch. Starch can be made from rice, corn, potatoes, and, of course, wheat.</p>
<p>But what is Wheat Starch? According to <a title="What is Wheat Starch?" href="http://www.glutenfreeliving.com/ingredient.php#wheatstarch" target="_blank"><span class="domtooltips">Gluten<span class="domtooltips_tooltip" style="display: none">the tough, viscid, nitrogenous substance remaining when the flour of wheat or other grain is washed to remove the starch</span></span>-Free Living</a>:</p>
<blockquote><p>[Wheat Starch is] a starch made from wheat. If wheat starch is used, &#8220;wheat&#8221; has to appear on the food label. Although processing often removes the gluten protein, some residual gluten can remain so wheat starch is not considered gluten free in the US. A special grade of wheat starch is permitted on the gluten-free diet in some European countries.</p></blockquote>
<p>So&#8230;what does that mean? Well, it means that there is a possible issue with cross contamination. Yes, processing often removes the big, bad, stomach wrenching gluten. However, wheat is, well, wheat. You can&#8217;t remove every tiny particle of gluten unless you remove <em><strong>all</strong> </em>the wheat.</p>
<p>Does this mean I have to give up my delicious BBQ and tasty outdoor meals? NO! Avoiding possible gluten in charcoal is super easy. <a title="Does charcoal contain gluten?" href="http://celiacdisease.about.com/od/copingwiththediet/f/Does-Charcoal-Contain-Gluten.htm" target="_blank">Jane Anderson on About.com</a> has a great list of simple solutions that will keep you grilling (or smoking meat) for many years to come.</p>
<ul>
<li>First, you can purchase 100% pure wood charcoal instead of briquettes — you might not find it in your local grocery store, but big chain hardware stores carry it, and I&#8217;ve seen it at Wal-Mart. It&#8217;s commonly called &#8220;lump charcoal,&#8221; and the pieces will not be uniform like briquettes; instead, they will look just like burnt pieces of wood (which they are). You even can use different varieties of lump charcoal, such as mesquite or hickory, to impart different flavors to your grilled foods.</li>
<li>If you prefer briquettes (they do tend to light more easily than lump charcoal), you can stick with Kingsford briquettes. A Kingsford company representative confirmed to me that the company customarily uses corn starch, not wheat starch, to make its briquettes. Therefore, unless you&#8217;re extremely sensitive to corn as well as to gluten, you should be reasonably safe using Kingsford briquettes.</li>
<li>Finally, you can invest in that <span class="domtooltips">gas<span class="domtooltips_tooltip" style="display: none">a product of digestion that is made primarily of odorless vapors -- carbon dioxide, oxygen, nitrogen, hydrogen, and sometimes methane. The unpleasant odor is due to bacteria in the large intestine that release small amounts of gases containing sulfur. Everyone has gas and eliminates it by burping or passing it through the rectum. In many instances people think they have too much gas, when in reality they have normal amounts. Most people produce one to three pints of intestinal gas in 24 hours, and pass gas an average of 14 times a day.</span></span> grill you (or your significant other) has been craving. </ul>
<p>**Be sure your marshmallows are gluten-free!</p>
<h2> Directions:</h2>
<ol>
<li>In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.</li>
<li>Add Kellogg&#8217;s® Rice Krispies® Gluten-Free cereal. Stir until well coated.</li>
<li>Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray.</li>
<li>Cool and cut into 2-inch squares. Best if served the same day.</li>
</ol>
<h2>Microwave Directions:</h2>
<ol>
<li>In microwave-safe bowl, heat butter and marshmallows on HIGH for 1 and a half  minutes. Stir.</li>
<li>Heat for another 1 and a half minutes. Stir.</li>
<li>Add Kellogg&#8217;s® Rice Krispies® Gluten-Free cereal. Stir until well coated.</li>
<li>Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray.</li>
<li>Cool and cut into 2-inch squares. Best if served the same day.</li>

This is one of my favorite dishes and I&#8217;m constantly asking my husband if we can make it for dinner. I like to make a little extra sauce for side dishes as well&#8211;yum!</p>
<h2>Ingredients:</h2>
<ul>
<li>1/2 cup Parmesan cheese</li>
<li>1/4 cup butter, softened</li>
<li>3 tablespoons mayonnaise</li>
<li>2 tablespoons fresh lemon juice</li>
<li>1/4 teaspoon dried basil</li>
<li>1/4 teaspoon ground black pepper</li>
<li>1/8 teaspoon onion powder</li>
<li>1/8 teaspoon celery salt</li>
<li>2 pounds tilapia fillets</li>
</ul>
<h2>Directions:</h2>
<ol>
<li>Preheat your oven&#8217;s broiler. Grease a broiling pan or line pan with aluminum foil.</li>
<li>In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice.</li>
<li>Season the cheese mixture with dried basil, pepper, onion powder and celery salt. Mix well and set aside.</li>
<li>Arrange fillets in a single layer on the prepared pan.</li>
<li>Broil a few inches from the heat for 2 to 3 minutes.</li>
<li>Flip the fillets over and broil for a couple more minutes.</li>
<li>Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork.</li>
<li>Be careful not to overcook the fish.</li>

<p>My husband, Andrew, and I went traipsing around downtown today to see what trouble we could get into and we found the most awesome little food and candy store! Walking down the street I happened to catch a mega-supply of <a title="Bob's Red Mill - Gluten Free Products" href="http://www.bobsredmill.com/gluten-free/" target="_blank">Bob&#8217;s Red Mill<em></em></a>. I just <em>had</em> to check this out!</p>
<p>The <a title="PA Dutch Food &amp; Candy Company" href="http://www.padutchfoodcandycompany.com/" target="_blank">PA Dutch Food &amp; Candy Company</a> (1006 Caroline Street, Fredericksburg, Virginia/540-479-3704) had a pretty awesome selection of <span class="domtooltips">gluten<span class="domtooltips_tooltip" style="display: none">the tough, viscid, nitrogenous substance remaining when the flour of wheat or other grain is washed to remove the starch</span></span>-free products as well as a rather large stash of vintage candy products. I took the opportunity to chat with the owner for a bit to see what got him started in the world of <span class="domtooltips">gluten<span class="domtooltips_tooltip" style="display: none">the tough, viscid, nitrogenous substance remaining when the flour of wheat or other grain is washed to remove the starch</span></span>-free. He&#8217;s one of the lucky ones that has only been put on a modified gluten-free diet, but he wanted to provide good food for the locals as well as an online store for people looking for their Bob&#8217;s Red Mill and other gluten-free product fix.</p>
<p>What really caught my attention were all the little &#8220;<strong>gluten-free/Careful! Please Don&#8217;t Contaminate</strong>&#8221; stickers all over the store. Since they are not a dedicated gluten-free seller, the owner wanted to make sure gluten-free products were very clearly marked. Not only for ease of purchase for us Celiacs, but also as a huge &#8220;red flag&#8221; to everyone as an extra &#8220;please be super cautious!&#8221; warning. So&#8230;super, duper thank you!!! I begged for a little supply of these stickers, and I&#8217;m happy to say the owner was very nice about handing over a small stash.</p>
<p>This was a cool experience and I got some excellent gluten-free food to try! I definitely encourage everyone driving through central Virginia to make a stop by the PA Dutch Food &amp; Candy Company and say &#8220;hi&#8221;!</p>
<p>And if you are wondering, yes those are individual snack-sized Nutella packs! I did confirm with NutellaUSA that Nutella is gluten-free. Here is what they said (last checked April 2012):</p>

<li>1 (1.25 ounce) package taco seasoning</li>
<li>3 whole skinless, boneless chicken breasts</li>

<h2>After soup cooks:</h2>
<ul>
<li>Shredded Cheddar cheese (optional)</li>
<li>Sour cream (optional)</li>
<li>Crushed tortilla chips (optional)</li>
</ul>

<h2>DIRECTIONS:</h2>
<ol>
<li>Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker.</li>
<li>Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients.</li>
<li>Set slow cooker for low heat, cover, and cook for 5 hours.</li>
<li>Remove chicken breasts from the soup, and allow to cool long enough to be handled.</li>
<li>Stir the shredded chicken back into the soup, and continue cooking for 2 hours.</li>
<li>Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.</li>

<h2><strong>Directions:</strong></h2>
<ol>
<li>Combine the shrimp, pork, scallions, cornstarch, garlic, hoisin sauce 1 teaspoon of the sesame oil and all of the soy sauce in a bowl and set aside.</li>
<li>Arrange wontons on a work surface (you might want to coat the surface with extra cornstarch for easier working).</li>
<li>Place 1-1 ½ teaspoons of meat mixture on each wrapper.</li>
<li>Moisten the edges of the wrapper and carefully fold into a packet, pressing edges firmly together (gluten-free wonton wrappers are extremely delicate, so handle with care).</li>
<li>Place completed wontons on a baking sheet covered in cornstarch and cover with a damp towel.</li>
<li>Bring a large pot of water to a boil.</li>
<li>Add the wontons to boiling water a few at a time.</li>
<li>Let the water return to a boil and wait for the wontons to float to the top (about 1-1 ½ minutes).</li>
<li>Remove the wontons with a slotted spoon and drain.</li>
<li>Toss the finished wontons as they are removed with the remaining teaspoon of sesame oil to prevent them from sticking together.</li>

<h2><strong>Directions:</strong></h2>

<li>Lightly beat the egg with the salt in mixer.</li>
<li>Slowly add the flour to the egg mixture together.</li>
<li>Add in 2 tablespoons of water. Slowly add water until workable dough forms.</li>
<li>The dough should be like a stiff pasta dough, slightly sticky, but not overly sticky. If it is too dry, add more water. If too sticky, add more flour.</li>
<li>Beat on a medium setting for 5 minutes.</li>
<li>Cover dough with a wet towel and let rest for 10 minutes.</li>
<li>Liberally cover your rolling surface in cornstarch. Turn dough out onto surface and cover with more cornstarch.</li>
<li>Roll dough until very thin, sprinkling with cornstarch as you go to keep it from sticking to the counter and rolling pin.</li>
<li>Once the dough is thin to your liking, use a pizza cutter to cut the dough into 4 inch by 4 inch squares and place parchment paper between each piece until you are ready to use them.</li>
</ul>

<p>While this made for a delicious dessert, custard was certainly above the level of most the students in the class. There were all of two of us who managed a whip this up only to have our instructor forget that having us make the dessert at the beginning of class was a terrible idea because Zabaglione separates after sitting for 15 minutes. Just remember, you’re supposed to serve it right away. No matter what, Zabaglione will separate after sitting for 15 minutes…always!</p>
<h2>Ingredients:</h2>
<ul>
<li>1/4 cup berries</li>
<li>3 Egg Yolks</li>
<li>2 tbsp Sugar</li>
<li>2 tbsp Marsala Wine**</li>
<li>1 sprig of Mint</li>
</ul>
<p>**Marsala Wine is a fortified wine. This means that a hard alcohol (a distilled alcohol) was added to the Marsala wine during fermentation. Most Marsala wines have had sherry or  brandy added to them, but always do your fact checking and back tracking on any products.</p>

<h2>Directions:</h2>
<ol>
<li>Wash and dry berries. Place in a wine glass or small bowl.</li>
<li>Using a double boiler, heat water in bottom pan to boiling, then reduce heat to a low simmer.</li>
<li>Whisk egg yolks, sugar, and wine together vigorously for 15-20 minutes, or until mixture becomes thick and peaks begin to form (i.e. trails off the whisk). You may want to use an electric hand mixer.</li>
<li>Immediately spoon over your berries and add mint.</li>
<li>Serve without delay. Zabaglione will separate within 15 minutes.</li>
